Ingredients

  • Day-old bread (brioche, challah, or white sandwich bread)
  • Large eggs
  • Whole milk (or cream, half-and-half)
  • Granulated sugar
  • Pure vanilla extract
  • Cinnamon
  • Unsalted butter (for greasing and topping)

  • Melted butter (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 12-cup standard muffin tin with butter or cooking spray.
  2. Cut the day-old bread into roughly 1-inch cubes.
  3. In a large mixing bowl, whisk together the eggs, milk (or cream), granulated sugar, vanilla extract, and cinnamon until well combined and slightly frothy.
  4. Add the bread cubes to the custard mixture and gently toss to ensure all pieces are coated. Let them soak for about 10-15 minutes, tossing occasionally.
  5. Transfer the custard-soaked bread cubes into each prepared muffin cup, filling them about two-thirds to three-quarters full.
  6. Bake in the preheated oven for 20-25 minutes until puffed up, golden brown on top, and cooked through.
  7. While the muffins are baking, melt about 1/4 cup of butter in a small microwave-safe bowl and combine 1/2 cup granulated sugar with 1 tablespoon of ground cinnamon in another shallow bowl.
  8. Once the muffins come out of the oven, let them cool in the tin for 2-3 minutes. Brush each muffin with melted butter, then roll or dredge in the cinnamon sugar mixture until coated.
