Ingredients

  • Large Sweet Onions
  • Cream Cheese
  • Fresh Jalapenos
  • Optional Cheese (Shredded)
  • All-Purpose Flour
  • Eggs
  • Panko Breadcrumbs
  • Oil for Frying
  • Seasonings (Salt, Black Pepper, Cayenne Pepper)

Instructions

  1. Prepare Your Onions: Peel the large sweet onions and slice them into ½-inch thick rounds. Gently separate the rings and lay them on a paper towel-lined baking sheet.
  2. Make the Jalapeno Popper Filling: In a medium bowl, combine softened cream cheese, finely minced fresh jalapenos, and any optional shredded cheese. Season with salt and black pepper, and mix until smooth.
  3. Stuff the Onion Rings: Fill the center cavity of each onion ring with the cream cheese mixture, ensuring it's compact and level with the top and bottom of the onion ring.
  4. Chill the Stuffed Rings: Place the baking sheet with the stuffed onion rings into the freezer for about 20-30 minutes or in the refrigerator for at least an hour.
  5. Set Up Your Breading Station: Prepare three shallow dishes for breading: one with seasoned flour, one with whisked eggs, and one with Panko breadcrumbs.
  6. Bred the Stuffed Rings: Dredge each onion ring in the seasoned flour, dip into the egg wash, and roll in Panko breadcrumbs. For extra crispiness, repeat the egg wash and Panko step.
  7. Heat the Frying Oil: In a deep pot, heat oil to 350-375°F (175-190°C).
  8. Fry the Stuffed Onion Rings: Carefully lower 3-4 breaded onion rings into the hot oil and fry for 3-5 minutes until golden brown and crispy.
  9. Drain and Serve: Remove the fried onion rings from the oil and transfer them to a wire rack to drain excess oil. Sprinkle with salt and serve hot with dipping sauces.

Nutrition
