  • 9 slices of good quality white or whole wheat sandwich bread, thinly sliced
  • Sliced turkey or chicken breast, freshly roasted or good quality deli-sliced
  • Crispy beef bacon
  • Crisp lettuce (Romaine or butter lettuce)
  • Ripe tomatoes (beefsteak or vine-ripened)
  • Mayonnaise (full-fat recommended)
  • Cheese (Swiss, cheddar, or provolone, thinly sliced)
  • Thinly sliced red onion (optional)
  • Avocado slices (optional)
  • Pickles (optional)

Instructions

  1. Prepare Your Proteins: If using pre-cooked turkey or chicken, ensure it's thinly sliced and ready to go. For the beef bacon, cook it in a skillet over medium heat until it's wonderfully crisp. Once cooked, transfer it to a plate lined with paper towels to drain any excess fat.
  2. Toast the Bread: Heat your toaster or a skillet over medium heat. Lightly toast nine slices of your chosen bread until they are golden brown and slightly crispy. Once toasted, immediately spread a generous, even layer of mayonnaise on one side of each slice.
  3. Assemble the First Layer: Take three of your mayo-slathered toast slices. On each of these bottom slices (mayo side up), lay down a crisp lettuce leaf. Next, add a layer of your thinly sliced turkey or chicken breast. Follow this with a slice of cheese, if using. Top with a few slices of ripe tomato.
  4. Add the Middle Layer: Place a second slice of mayo-slathered toast (mayo side down) onto each of your sandwich stacks. Gently press down. On this new layer of toast, add another generous spread of mayonnaise on the top side. Arrange your crispy beef bacon. Add another layer of fresh lettuce on top of the bacon.
  5. Finish and Cut: Place the final mayo-slathered toast slice (mayo side down) on top of each sandwich. Gently but firmly press down on the entire sandwich to compact it slightly. Insert two long toothpicks or small skewers through the sandwich, forming an 'X' shape. Carefully cut each sandwich into four triangles, following the lines of the toothpicks.
  6. Serve Immediately: Arrange the quartered sandwiches neatly on a plate. Club sandwiches are always best enjoyed fresh and slightly warm from the toasted bread and cooked bacon.
