Ingredients

  • Sourdough or hearty artisan white bread
  • Shredded Fontina cheese
  • Creamy Provolone cheese
  • Sharp White Cheddar cheese
  • Oil-packed sun-dried tomatoes
  • Softened unsalted butter
  • Garlic powder (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Gather all your ingredients.
  2. If your sun-dried tomatoes are oil-packed, drain them thoroughly and chop them roughly.
  3. Grate your cheese if it isn't already shredded.
  4. Soften your butter to room temperature.
  5. Take two slices of bread and spread a thin layer of softened butter on one side of each slice.
  6. Place one slice of bread, butter-side down, onto a clean surface.
  7. Layer half of your mixed shredded cheese evenly over the bread.
  8. Scatter a generous amount of chopped sun-dried tomatoes over the cheese layer.
  9. Top with the remaining half of your shredded cheese.
  10. Carefully place the second slice of bread on top, butter-side up.
  11. Heat a non-stick skillet or cast-iron pan over medium-low heat.
  12. Once the pan is warm, place your assembled sandwich into the pan.
  13. Cook for about 4-6 minutes on the first side until the bread is golden-brown and the cheese starts to melt.
  14. Cover the pan with a lid for the last minute or two of cooking on the first side for extra meltiness.
  15. Carefully flip the sandwich to the second side and cook for another 3-5 minutes until golden brown and the cheese is melted.
  16. Remove the sandwich from the pan.
  17. Transfer the grilled cheese to a cutting board and let it rest for a minute before slicing.
  18. Slice diagonally and serve hot.
