- Turn the dough out onto a lightly cassava-floured surface. Knead for 3-5 minutes until you have a smooth, pliable ball that is soft and slightly elastic but not sticky. Adjust with tiny amounts of flour or water if needed.
- Place the dough ball back in the bowl, cover with a damp kitchen towel or plastic wrap, and let it rest at room temperature for at least 15-20 minutes.
- While the dough rests, heat a cast-iron skillet, flat griddle, or non-stick pan over medium-high heat.
- Divide the rested dough into 8-12 equal pieces, rolling each into a smooth ball.
- For pressing or rolling, place a dough ball between two pieces of parchment paper or plastic wrap on your press and press firmly to create a thin, even circle (approx. 6-8 inches), or roll a dough ball between two pieces of parchment paper using a rolling pin.
- Carefully transfer one tortilla to the preheated pan. Cook for 1-2 minutes per side until light brown spots appear and it puffs slightly. Avoid overcooking to prevent dryness.
- As each tortilla finishes cooking, transfer it to a plate and cover immediately with a clean kitchen towel or place in a tortilla warmer to keep them soft and pliable.
