Cassava Flour Tortillas: Easy Grain-Free Recipe

  • 1/2 teaspoon salt
  • 3/4 cup warm water
  • 2 tablespoons avocado oil (or neutral oil)

Instructions

  1. In a large bowl, whisk together the cassava flour and salt until well blended.
  2. Gradually pour in the warm water and avocado oil. Start with most of the water, mixing with a spoon or your hands until a shaggy dough forms. Add remaining water sparingly, a tablespoon at a time, until the dough comes together.
  3. Turn the dough out onto a lightly cassava-floured surface. Knead for 3-5 minutes until you have a smooth, pliable ball that is soft and slightly elastic but not sticky. Adjust with tiny amounts of flour or water if needed.
  4. Place the dough ball back in the bowl, cover with a damp kitchen towel or plastic wrap, and let it rest at room temperature for at least 15-20 minutes.
  5. While the dough rests, heat a cast-iron skillet, flat griddle, or non-stick pan over medium-high heat.
  6. Divide the rested dough into 8-12 equal pieces, rolling each into a smooth ball.
  7. For pressing or rolling, place a dough ball between two pieces of parchment paper or plastic wrap on your press and press firmly to create a thin, even circle (approx. 6-8 inches), or roll a dough ball between two pieces of parchment paper using a rolling pin.
  8. Carefully transfer one tortilla to the preheated pan. Cook for 1-2 minutes per side until light brown spots appear and it puffs slightly. Avoid overcooking to prevent dryness.
  9. As each tortilla finishes cooking, transfer it to a plate and cover immediately with a clean kitchen towel or place in a tortilla warmer to keep them soft and pliable.
