Cheesy Potato Burritos: A Comfort Meal You’ll Love!

Ingredients

  • Russet potatoes (or Yukon gold or sweet potatoes)
  • Cheddar cheese (or Monterey Jack or pepper jack)
  • Flour tortillas (or whole wheat or corn tortillas)
  • Black beans (or pinto beans)
  • Cumin
  • Paprika
  • Salt
  • Onions
  • Bell peppers
  • Oil

Instructions

  1. Start by peeling and dicing your potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook until they are fork-tender, about 15-20 minutes. Drain and return to the pot.
  2. While the potatoes are cooking, heat a skillet over medium heat. Add a splash of oil, then sauté chopped onions and bell peppers until they are soft, about 5-7 minutes. Add the cooked potatoes, black beans, cumin, paprika, and a generous pinch of salt. Mix well and cook for another 5 minutes to meld the flavors.
  3. Remove the skillet from heat and stir in half of the cheese until it’s melted and combined with the filling.
  4. Warm your tortillas in a dry skillet for a few seconds on each side to make them pliable. Spoon a generous amount of the potato mixture onto the center of each tortilla and sprinkle with the remaining cheese. Fold in the sides and roll tightly from the bottom up. Place seam-side down on a plate.
  5. In the same skillet, add a little more oil and place the burritos seam-side down. Cook over medium heat until the tortillas are golden and crispy, about 3-4 minutes per side.
  6. Cut the burritos in half and serve hot with your favorite toppings like sour cream, guacamole, or salsa.
