  • Taco seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Prick them several times with a fork to allow steam to escape during baking. Rub them with a bit of olive oil and sprinkle with salt.
  3. Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  4. While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
  5. Once the beef is browned, stir in the taco seasoning along with a splash of water (about 1/4 cup) to help the spices stick. Cook for another 5 minutes until the mixture thickens.
  6. Once your potatoes are done baking, remove them from the oven. Cut a slit down the center of each potato and gently fluff the insides with a fork.
  7. Spoon the seasoned beef mixture generously into each potato. Top with a handful of shredded cheese, allowing it to melt slightly from the heat of the potato.
  8. For an extra cheesy finish, place the stuffed potatoes under the broiler for 2-3 minutes until the cheese is bubbly and golden.
  9. Remove the potatoes from the oven and top with sour cream, chopped green onions, and jalapeños if desired. Serve warm and enjoy!
