Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil or butter
  • 8 oz wide egg noodles
  • 4 tablespoons (½ stick) unsalted butter
  • 1 cup low-sodium chicken broth
  • Optional: 1-2 tablespoons cream cheese or a splash of heavy cream
  • Dried parsley or dried chives (for garnish)

Instructions

  1. Start by patting your boneless, skinless chicken breasts or thighs dry with a paper towel. Cut the chicken into 1-inch bite-sized pieces. Season generously with ½ teaspoon of salt, ¼ teaspoon of black pepper, ¼ teaspoon of garlic powder, and ¼ teaspoon of onion powder. Toss to ensure the chicken is evenly coated.
  2. Heat 1 tablespoon of olive oil or butter in a large skillet or Dutch oven over medium-high heat. Once hot, add the seasoned chicken pieces in a single layer, making sure not to overcrowd the pan. Cook for 4-6 minutes, flipping occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C). Once cooked, remove the chicken from the pan and set it aside on a plate.
  3. While your chicken is cooking, bring a large pot of salted water to a rolling boil. Add your wide egg noodles and cook according to package directions until al dente, usually about 6-8 minutes. Once cooked, drain the noodles well but do not rinse them.
  4. Return the same skillet to medium heat. Add 4 tablespoons (½ stick) of unsalted butter to the pan. Let it melt and sizzle gently, scraping up any browned bits from the chicken.
  5. Once the butter is melted, add the drained egg noodles to the skillet. Toss gently to coat them in the butter. Pour in 1 cup of chicken broth. Return the cooked chicken pieces to the pan. Add any remaining salt, pepper, garlic powder, and onion powder to taste. Stir everything together gently until well combined.
  6. Reduce the heat to low and let the noodles and chicken simmer in the broth for about 2-3 minutes. If you're adding cream cheese or heavy cream, stir it in until smooth and fully incorporated.
  7. Taste and adjust seasonings one last time if needed. Garnish with fresh chopped parsley or chives if desired. Serve your comforting Chicken Buttered Noodles warm and enjoy!
