Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. If using a store-bought crust, place it in a 9-inch pie dish. If making from scratch, roll out your dough, fit it into the dish, and blind bake it for about 10 minutes until lightly golden.
  3. In a medium saucepan, combine the milk, cream, sugar, and salt. Heat over medium heat until just steaming, but do not boil.
  4. In a separate bowl, whisk together the eggs, cinnamon, and vanilla extract until well blended.
  5. Gradually pour the hot milk mixture into the egg mixture while whisking continuously to temper the eggs.
  6. Pour the custard mixture into the prepared pie crust, smoothing the top with a spatula.
  7. Bake the pie in the preheated oven for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.
  8. Allow the pie to cool at room temperature for about an hour, then refrigerate for at least three hours (or overnight) before serving.
