  • 1 lb lean ground beef (80/20 or 90/10)
  • 1 yellow onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 cups diced potatoes (Russet or Yukon Gold)
  • 1 can (14.5 oz) petite diced tomatoes (undrained)
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 cup frozen corn
  • 4 cups low-sodium beef broth
  • 8 oz full-fat cream cheese, softened
  • 1 cup heavy cream
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • Optional: pinch of cayenne pepper

Instructions

  1. In a large Dutch oven or heavy-bottomed pot, brown your ground beef over medium-high heat. Break it up with a spoon as it cooks. Once fully browned, drain off any excess fat and set the cooked beef aside.
  2. Reduce the heat to medium. Add a tablespoon of olive oil (if needed) to the pot. Add the chopped onion and bell pepper, and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Cook for about 1 minute, stirring constantly.
  4. Return the browned ground beef to the pot. Pour in the beef broth and add the diced potatoes, diced tomatoes (undrained), and both types of beans. Stir everything together well.
  5. Bring the soup to a gentle boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the potatoes are fork-tender.
  6. Once the potatoes are tender, uncover the pot. Add the softened cream cheese in small chunks and stir constantly until it is completely melted and smooth into the soup.
  7. Stir in the heavy cream and the frozen corn. Heat through gently for another 3-5 minutes.
