Crispy Chicken Taquitos are a delightful snack filled with tender, seasoned chicken and fried to perfection for an irresistible crunch. Perfect for parties or family gatherings, these taquitos are customizable and sure to please everyone.

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cream cheese
  • 1 tablespoon taco seasoning
  • 1/4 cup chopped fresh cilantro
  • 1012 corn tortillas
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked shredded chicken, shredded cheese, cream cheese, taco seasoning, chopped cilantro, and a pinch of salt and pepper. Mix until all ingredients are well incorporated.
  2. In a skillet over medium heat, warm the corn tortillas for about 20-30 seconds on each side until pliable.
  3. Place about 2-3 tablespoons of the chicken filling on the lower third of each tortilla. Roll the tortilla tightly around the filling, tucking in the sides as you go.
  4. In the same skillet, add enough vegetable oil to cover the bottom, about 1/2 inch deep. Heat the oil over medium-high heat until it shimmers. Carefully place the taquitos seam-side down in the hot oil, frying in batches for about 2-3 minutes on each side until golden brown and crispy.
  5. Once crispy, remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your favorite dipping sauces.
