Ingredients

  • Shelf-stable potato gnocchi
  • Fresh baby spinach
  • Crumbled feta cheese
  • Extra virgin olive oil
  • Freshly minced garlic
  • Cherry tomatoes (optional)
  • Lemon zest
  • Fresh lemon juice
  • Salt
  • Freshly cracked black pepper
  • Red pepper flakes (optional)

Instructions

  1. Heat a large, heavy-bottomed skillet over medium-high heat and add about 2-3 tablespoons of olive oil.
  2. Once the oil shimmers, add the gnocchi in a single layer and cook undisturbed for 3-5 minutes until golden-brown on the bottom.
  3. Flip the gnocchi and continue cooking for another 5-7 minutes, stirring occasionally, until crispy all over. Transfer to a plate and set aside.
  4. Reduce the heat to medium and add another tablespoon of olive oil if the pan is dry.
  5. Add the minced garlic and cook for about 30-60 seconds until fragrant, being careful not to burn it.
  6. Add the fresh baby spinach to the pan and cook, stirring occasionally, until wilted and tender, about 2-3 minutes.
  7. If using cherry tomatoes, add them now and cook for another 2-3 minutes until they soften and burst slightly.
  8. Return the crispy gnocchi to the pan with the spinach mixture, and add the crumbled feta cheese, lemon zest, and fresh lemon juice.
  9. If using red pepper flakes, add them now and toss everything gently to combine.
  10. Taste and adjust seasoning as needed, then serve immediately while the gnocchi are crispy.
