  • 2 pounds starchy potatoes (Russets or Yukon Golds)
  • 78 ounces block of good quality Greek feta cheese, preferably packed in brine
  • 1 whole head of garlic (about 810 cloves)
  • 57 tablespoons extra virgin olive oil
  • 1 teaspoon flaky sea salt
  • ½ teaspoon freshly cracked black pepper
  • 12 teaspoons dried oregano
  • Pinch of red pepper flakes (optional)
  • Fresh lemon juice (to taste)
  • Chopped fresh parsley or dill (optional garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and peel the potatoes, then cut them into uniform 1-inch pieces.
  2. Place the potato pieces in a large pot of cold, salted water. Bring to a boil and cook for 5-7 minutes until the edges soften but they remain firm. Drain well in a colander and return them to the empty hot pot.
  3. Give the drained potatoes a good shake to rough up their surface. Drizzle with 3-4 tablespoons of olive oil, and season with 1 teaspoon of flaky sea salt, ½ teaspoon of black pepper, and 1 teaspoon of dried oregano. Toss to coat evenly.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet. Roast for 20 minutes.
  5. While the potatoes roast, prepare the feta and garlic. Place the block of feta in a small, oven-safe baking dish or on the potato baking sheet. Surround it with the smashed garlic cloves. Drizzle with 2-3 tablespoons of olive oil, and sprinkle with a pinch of salt, black pepper, and ½ teaspoon of dried oregano.
  6. After 20 minutes, pull out the baking sheet(s) and add the feta dish to the oven. Continue roasting everything for another 25-35 minutes.
  7. Check on the potatoes every 10-15 minutes, flipping them to ensure even browning. The feta should become soft and slightly browned, while the garlic cloves will be tender.
  8. Once everything is cooked, remove from the oven. Transfer the crispy potatoes to a serving platter, crumble the baked feta and garlic over them, and drizzle with the garlicky olive oil. Finish with a squeeze of fresh lemon juice and a sprinkle of fresh herbs if desired. Serve immediately.
