  • 23 ripe bananas
  • 2 cups milk

  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine 2 cups of rolled oats, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, and a pinch of salt. Stir until everything is evenly mixed.
  3. In a separate bowl, mash 2-3 ripe bananas until smooth. Add 2 cups of milk, 1/4 cup of maple syrup (or your sweetener of choice), and 2 eggs (or your egg substitute). Whisk until well combined.
  4. Pour the wet mixture into the dry oat mixture and stir until everything is fully incorporated. You can fold in 1/2 cup of chopped nuts or chocolate chips at this stage, if desired.
