- 3 tablespoons cold water
- 1 cup heavy cream
- 1 cup milk
- 1/2 cup sugar
- 1 teaspoon ground cardamom
- 1 teaspoon vanilla extract
- 2 cups water

- Bosc or Anjou pears (or apples as an alternative)

- In a small bowl, sprinkle 2 teaspoons of gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes until it becomes spongy.
- In a saucepan, combine 1 cup of heavy cream and 1 cup of milk. Add 1/2 cup of sugar and 1 teaspoon of ground cardamom. Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling.
- Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved. If using vanilla extract, add 1 teaspoon at this point.
- Pour the mixture into individual serving glasses or molds. Let them cool to room temperature, then refrigerate for at least 4 hours or until set.
- In a saucepan, combine 2 cups of water, 1/2 cup of sugar, 1 teaspoon of vanilla extract, and the juice of half a lemon. Optionally, add a few whole cardamom pods for extra flavor.
- While the liquid heats, peel and core your pears. You can leave the stems on for a decorative touch.
- Once the liquid is simmering, gently add the pears. Allow them to poach for 15-20 minutes, until tender but not mushy. Remove the pears and let them cool slightly in the syrup.
