Delicious Cardamom Panna Cotta with Poached Pears

  • 3 tablespoons cold water
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 cup sugar
  • 1 teaspoon ground cardamom
  • 1 teaspoon vanilla extract
  • 2 cups water
  • 1/2 cup sugar (for poaching liquid)
  • 1 teaspoon vanilla extract (for poaching liquid)
  • juice of half a lemon
  • Bosc or Anjou pears (or apples as an alternative)
  • whole cardamom pods (optional for poaching liquid)

Instructions

  1. In a small bowl, sprinkle 2 teaspoons of gelatin over 3 tablespoons of cold water. Let it sit for about 5 minutes until it becomes spongy.
  2. In a saucepan, combine 1 cup of heavy cream and 1 cup of milk. Add 1/2 cup of sugar and 1 teaspoon of ground cardamom. Heat the mixture over medium heat, stirring occasionally, until it is hot but not boiling.
  3. Remove the saucepan from heat. Stir in the bloomed gelatin until completely dissolved. If using vanilla extract, add 1 teaspoon at this point.
  4. Pour the mixture into individual serving glasses or molds. Let them cool to room temperature, then refrigerate for at least 4 hours or until set.
  5. In a saucepan, combine 2 cups of water, 1/2 cup of sugar, 1 teaspoon of vanilla extract, and the juice of half a lemon. Optionally, add a few whole cardamom pods for extra flavor.
  6. While the liquid heats, peel and core your pears. You can leave the stems on for a decorative touch.
  7. Once the liquid is simmering, gently add the pears. Allow them to poach for 15-20 minutes, until tender but not mushy. Remove the pears and let them cool slightly in the syrup.
