Ingredients

  • Eggroll Wrappers
  • Cooked Shredded Beef
  • Canned Black Beans (rinsed and drained)
  • Corn (fresh, canned, or frozen)
  • Fresh Baby Spinach
  • Monterey Jack Cheese
  • Cheddar Cheese
  • Cumin
  • Chili Powder
  • Garlic Powder
  • Vegetable Oil (for frying)
  • Dipping Sauce (ranch or salsa)

Instructions

  1. In a large mixing bowl, combine the cooked shredded beef, black beans, corn, spinach, cheese, cumin, chili powder, and garlic powder. Mix until everything is evenly distributed.
  2. Lay out a clean surface and place a small bowl of water nearby to help seal the eggrolls.
  3. Take an eggroll wrapper and place it on the surface with one corner pointing towards you. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll it tightly. Use your finger to wet the top corner with water to seal the eggroll.
  4. In a large frying pan or deep fryer, heat vegetable oil to 350°F (175°C). Ensure there’s enough oil to submerge the eggrolls.
  5. Carefully place a few eggrolls into the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil.
