  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
  2. In a large mixing bowl, combine 2 cups of all-purpose flour, 2 cups of granulated sugar, and 1 cup of brown sugar. Add 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of salt, 1 teaspoon of ground cinnamon, and ½ teaspoon of nutmeg. Whisk these dry ingredients together.
  3. In another bowl, whisk together 4 large eggs, 1 cup of vegetable oil, and 1 teaspoon of vanilla extract. Stir in 2 cups of grated carrots and 1 cup of drained crushed pineapple.
  4. Gradually add the wet mixture to the dry ingredients, mixing until just combined. Be careful not to overmix. Gently fold in 1 cup of chopped walnuts or pecans.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  6. While the cakes are cooling, prepare your cream cheese frosting by beating together 8 oz of cream cheese, ½ cup of unsalted butter, and 2 cups of powdered sugar until smooth and creamy. Add a splash of vanilla extract for flavor.
  7. Once the cakes are cooled, place one layer on a serving plate. Spread a generous layer of frosting on top, then carefully place the second layer on top and frost the entire cake. You can also add some crushed pineapple or chopped nuts on top for decoration.
