  1. In a large mixing bowl, combine the warm milk and sugar, then sprinkle the yeast on top. Let it sit for about 5-10 minutes until it becomes frothy.
  2. In another bowl, mix together the flour, salt, and ground cinnamon. Gradually add the dry ingredients to the yeast mixture, then incorporate the melted butter, eggs, and vanilla extract. Mix until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. While the dough is rising, peel and dice the apples. In a separate bowl, combine the diced apples with brown sugar, lemon juice, nutmeg, and a pinch of cinnamon. Mix well to coat the apples evenly with the spices.
  5. After the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a large rectangle, about 1/4 inch thick. Spread softened butter over the dough, then sprinkle the cinnamon sugar mixture evenly across the surface.
  6. Evenly distribute the apple filling over the dough, making sure to leave a small border. Roll the dough tightly from the long side into a log. Slice the log into 1-inch thick rolls and place them in a greased baking dish. Allow the rolls to rise for an additional 30 minutes.
