  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with paper liners.
  3. In a large mixing bowl, crack 6 large eggs and whisk them until well combined. Add a splash of milk (about ¼ cup) and whisk again.
  4. Fold in about 1 cup of fresh spinach (chopped) and ½ cup of crumbled feta cheese into the egg mixture. Add any additional vegetables if desired.
  5. Season the egg mixture with salt, pepper, and any herbs you like.
  6. Pour the egg mixture evenly into the muffin cups, filling each about ¾ full.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  8. Once baked, let the muffins cool in the tin for about 5 minutes. Then, use a knife to gently loosen the edges before transferring them to a wire rack to cool completely.
