Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of ground ginger, 1 teaspoon of ground cinnamon, ½ teaspoon of nutmeg, and 1 teaspoon of baking soda. Set aside.
  3. In another bowl, beat ½ cup of softened unsalted butter with ½ cup of brown sugar and ¼ cup of granulated sugar until light and fluffy.
  4. Mix in 4 ounces of softened cream cheese until well incorporated.
  5. Beat in 1 large egg until fully combined, then stir in 1 tablespoon of non-alcoholic gin extract.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
  7. Cover the bowl with plastic wrap and let the dough chill in the refrigerator for about 30 minutes.
  8. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving some space between each. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Optional: Whip together 4 ounces of cream cheese with 1 cup of powdered sugar and a splash of non-alcoholic gin extract for a delicious frosting.
