- 16 oz of softened cream cheese
- ½ cup of sour cream
- ¾ cup of granulated sugar
- 1 tsp of vanilla extract
- 2 large eggs
- 1 ½ cups of crushed graham crackers
- ¼ cup of granulated sugar (for crust)
- ½ cup of melted butter
- Green food coloring
- Red topping (fresh raspberries or strawberries)
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine 1 ½ cups of crushed graham crackers with ¼ cup of granulated sugar and ½ cup of melted butter.
- Mix until the crumbs are well coated, then press the mixture firmly into the bottoms of a muffin tin lined with cupcake liners.
- Bake for about 10 minutes until slightly golden, then remove from the oven and let cool.
- In a large mixing bowl, beat 16 oz of softened cream cheese until smooth and creamy.
- Add ½ cup of sour cream, ¾ cup of granulated sugar, and 1 tsp of vanilla extract. Mix until well combined.
- In a separate bowl, whisk together 2 large eggs. Slowly add the eggs to the cream cheese mixture, beating well after each addition.
- Now, add a few drops of green food coloring and mix until you achieve the desired Grinch color.
- Pour the cheesecake filling over the cooled crusts, filling each cup about ¾ full.
- Bake in the oven for 18-20 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and crack the door open, letting the cheesecakes cool slowly for about 30 minutes to prevent cracking.
- Once cooled, refrigerate the cheesecakes for at least 2 hours, or overnight for best results.

Keywords: Make sure your cream cheese and eggs are at room temperature to blend smoothly. To avoid cracks, don’t overmix your batter after adding the eggs and avoid opening the oven door too frequently while baking. Top each cheesecake with a dollop of whipped cream and a raspberry or strawberry to symbolize the Grinch’s heart!
