Instructions

  1. Preheat your oven to 350°F (175°C). Cut your bolillo or French bread into 1-inch cubes. Spread them evenly on a baking sheet and toast in the oven for about 10-15 minutes until they’re golden and crispy.
  2. In a medium saucepan over medium heat, combine 2 cups of water, 1 cup of brown sugar, 1 stick of cinnamon, and any desired spices. Stir until the sugar dissolves, then let it simmer for about 10 minutes. Remove from heat and let it cool slightly.
  3. In a large bowl, whisk together 2 cups of milk, 3 eggs, and a teaspoon of vanilla extract. If you want to add a splash of non-alcoholic vanilla syrup, feel free!
  4. Add the toasted bread cubes into the egg and milk mixture, then pour in the warm syrup. Stir well to ensure all the bread is soaked. Add in your raisins, pineapple, or any other fruits and nuts you’re using. Gently fold in the crumbled cheese.
  5. Grease a 9×13-inch baking dish. Pour the bread mixture into the dish, spreading it evenly. If desired, sprinkle a little more cheese on top for extra flavor.
  6. Place the dish in the oven and bake for about 30-40 minutes, or until the top is golden and the pudding is set.
