Ingredients

  • Chicken (bone-in, skin-on or boneless thighs/breasts)

  • Scotch bonnet peppers (or habanero peppers)
  • Salt
  • Curry powder
  • Thyme
  • Bouillon cubes
  • Palm oil (or vegetable oil/olive oil)

Instructions

  1. Rinse the chicken pieces thoroughly and pat them dry with paper towels. Season with salt, curry powder, and thyme. Let it marinate for at least 30 minutes, or overnight for deeper flavor.
  2. Blend the tomatoes, red bell peppers, onions, and Scotch bonnet peppers together until smooth to create a consistent paste.
  3. In a large pot, heat the oil over medium heat. Once hot, add the marinated chicken pieces and brown them on all sides for about 5-7 minutes. Remove the chicken and set aside.
