- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 cup brown sugar
- 2 tablespoons melted butter
- Fresh pineapple rings or canned pineapple rings, drained
- Maraschino cherries (optional)
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, mix about 1/4 cup of brown sugar with 2 tablespoons of melted butter. Spread this mixture evenly on the bottom of your cookie forms or directly on the parchment paper. Place a pineapple ring over the sugar mixture, and if you like, add a maraschino cherry in the center.
- In a large mixing bowl, beat together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. This may take about 2-3 minutes.
- Mix in one egg and 1 teaspoon of vanilla extract until well combined.
- In another bowl, whisk together 2 cups of all-purpose flour, 1/2 teaspoon of baking soda, and 1 teaspoon of baking powder.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined. Be careful not to overmix.
- Using a cookie scoop or tablespoon, drop small balls of dough on top of the pineapple rings. Aim for about 1-2 tablespoons of dough per cookie.
- Bake the cookies in your preheated oven for about 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before gently flipping them over to cool completely on a wire rack. Serve and enjoy!

Keywords: If you find your dough too sticky, chilling it for about 30 minutes can make it easier to handle. You can also add a pinch of cinnamon or nutmeg to enhance the flavor profile.
