  • Yellow onions
  • Sharp cheddar cheese

  • Whole milk or heavy cream or half-and-half
  • Unsalted butter or olive oil

  • Nutmeg
  • Fresh thyme or rosemary (optional)
  • 4 tablespoons of flour

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel the potatoes and slice them thinly, about 1/8 inch thick.
  3. In a medium skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until softened, about 5 minutes. Remove from heat.
  4. In a saucepan, melt 4 tablespoons of butter. Stir in 4 tablespoons of flour and cook for about 2 minutes to form a roux. Gradually whisk in 2 cups of milk (or cream) and bring to a simmer, stirring constantly until thickened. Season with salt, pepper, and a pinch of nutmeg.
  5. In a greased baking dish, layer half of the potato slices, followed by half of the sautéed onions and a sprinkle of cheese. Pour half of the sauce over this layer. Repeat the layers with the remaining potatoes, onions, cheese, and sauce.
  6. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
  7. Allow the scalloped potatoes to cool for about 10 minutes before serving.
