- Yukon Gold or Russet potatoes
- Yellow onions
- Sharp cheddar cheese
- Gruyère or Monterey Jack cheese (optional)
- Whole milk or heavy cream or half-and-half
- Unsalted butter or olive oil
- Salt
- Pepper
- Nutmeg
- Fresh thyme or rosemary (optional)
- 4 tablespoons of flour
- Preheat your oven to 375°F (190°C).
- Peel the potatoes and slice them thinly, about 1/8 inch thick.
- In a medium skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until softened, about 5 minutes. Remove from heat.
- In a saucepan, melt 4 tablespoons of butter. Stir in 4 tablespoons of flour and cook for about 2 minutes to form a roux. Gradually whisk in 2 cups of milk (or cream) and bring to a simmer, stirring constantly until thickened. Season with salt, pepper, and a pinch of nutmeg.
- In a greased baking dish, layer half of the potato slices, followed by half of the sautéed onions and a sprinkle of cheese. Pour half of the sauce over this layer. Repeat the layers with the remaining potatoes, onions, cheese, and sauce.
- Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 20-30 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
- Allow the scalloped potatoes to cool for about 10 minutes before serving.
