  • 4 ounces smoked salmon, sliced or chopped

  • 1/2 cup cream cheese, softened and cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C). This ensures that your frittata cooks evenly and helps set the eggs perfectly.
  2. In a mixing bowl, whisk together 8 large eggs, 1/4 cup whole milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined and frothy.
  3. In a 10-inch oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add 1 small finely chopped onion and sauté for about 3-4 minutes, until the onions are translucent but not browned.
  4. Add 1 cup of chopped baby spinach to the skillet and stir for about 1-2 minutes until wilted.
  5. Reduce the heat to low and pour the egg mixture over the sautéed onions and spinach. Gently stir to combine all ingredients evenly.
  6. Next, add 4 ounces of sliced or chopped smoked salmon and 2 tablespoons of chopped fresh dill (or 1 tablespoon dried dill) on top of the egg mixture. Don’t stir; let it sit on top for a beautiful presentation.
  7. Dot the surface with 1/2 cup of softened cream cheese cut into small pieces, distributing it evenly across the frittata.
