Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add a chopped onion and a couple of minced garlic cloves. Sauté until they are soft and fragrant, about 5 minutes.
  2. If using fresh tomatoes, chop them roughly and add them to the pot. If using canned, pour in the whole tomatoes along with their juice. Stir to combine.
  3. Pour in about 4 cups of vegetable broth. Bring the mixture to a boil, then reduce heat and let it simmer for about 20-25 minutes, allowing the flavors to meld.
  4. Once the tomatoes are soft and the soup has simmered, use an immersion blender to puree it until smooth. If you don’t have one, carefully transfer it to a regular blender in batches. Return it to the pot.
  5. Taste the soup and season with salt, pepper, and a pinch of sugar to balance the acidity. Stir in fresh basil and oregano, letting it infuse the soup with flavor.
  6. In a bowl, combine 1 cup of ricotta cheese, 1/2 cup of grated Parmesan cheese, 1 cup of flour, and a pinch of salt. Mix until a soft dough forms. If it’s too sticky, add a little more flour until manageable.
  7. With floured hands, shape the dough into small balls, about the size of a golf ball.
