- 250g unsalted butter, softened
- 150g granulated sugar
- 3 large eggs
- 400g all-purpose flour
- 1 packet baking powder
- 200ml whole milk
- 500ml whole milk (for pudding)
- 1 packet vanilla pudding powder
- 50g sugar (for pudding)
- 200g flour (for crumble)
- 100g sugar (for crumble)
- 100g cold butter (for crumble)
- 1 teaspoon cinnamon
- Pinch of salt
- Preheat your oven to 180Β°C (350Β°F).
- Line a baking sheet (preferably a deep rectangular one) with parchment paper, or grease it with butter to prevent sticking.
- In a mixing bowl, cream together 250g of softened butter and 150g of sugar until light and fluffy. Add 3 large eggs one at a time, mixing well after each addition.
- In a separate bowl, mix 400g of flour, 1 packet of baking powder, and a pinch of salt. Gradually add this dry mixture to the butter mixture, alternating with 200ml of milk. Mix until well combined.
- In a saucepan, heat 500ml of milk until just boiling. In a separate bowl, mix 1 packet of vanilla pudding powder with 50g of sugar, and add a little bit of the hot milk to dissolve it. Then stir this mixture back into the saucepan and cook until thickened. Set aside to cool slightly.
- Spread the cake batter evenly onto the prepared baking tray, ensuring it covers the entire surface.
- Carefully pour the vanilla pudding over the batter, spreading it evenly.
- In a bowl, combine 200g of flour, 100g of sugar, 100g of cold butter, and a teaspoon of cinnamon. Use your fingers to rub the ingredients together until crumbly. Sprinkle this mixture over the pudding layer.
- Place the tray in the preheated oven and bake for about 35-40 minutes or until the crumble is golden brown and a toothpick inserted into the cake comes out clean.
- Allow the cake to cool in the tray for about 15 minutes before transferring it to a wire rack to cool completely. Cut into squares and serve!

Keywords: For a crumbly topping, ensure your butter is cold before mixing it with the flour. You can add lemon or orange zest to the batter for a citrusy twist. This cake is delicious on its own, but you can also serve it with a dollop of whipped cream or a scoop of ice cream for an indulgent treat.
