Delicious Vanilla Pudding Crumble Cake Recipe from the Sheet Pan

This German-inspired sheet cake combines rich vanilla pudding with a crunchy streusel topping, creating an irresistible dessert. Perfect for gatherings, it’s easy to prepare and sure to impress your friends and family.

  • 250g unsalted butter, softened
  • 150g granulated sugar
  • 3 large eggs
  • 400g all-purpose flour
  • 1 packet baking powder
  • 200ml whole milk
  • 500ml whole milk (for pudding)
  • 1 packet vanilla pudding powder
  • 50g sugar (for pudding)
  • 200g flour (for crumble)
  • 100g sugar (for crumble)
  • 100g cold butter (for crumble)
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 180Β°C (350Β°F).
  2. Line a baking sheet (preferably a deep rectangular one) with parchment paper, or grease it with butter to prevent sticking.
  3. In a mixing bowl, cream together 250g of softened butter and 150g of sugar until light and fluffy. Add 3 large eggs one at a time, mixing well after each addition.
  4. In a separate bowl, mix 400g of flour, 1 packet of baking powder, and a pinch of salt. Gradually add this dry mixture to the butter mixture, alternating with 200ml of milk. Mix until well combined.
  5. In a saucepan, heat 500ml of milk until just boiling. In a separate bowl, mix 1 packet of vanilla pudding powder with 50g of sugar, and add a little bit of the hot milk to dissolve it. Then stir this mixture back into the saucepan and cook until thickened. Set aside to cool slightly.
  6. Spread the cake batter evenly onto the prepared baking tray, ensuring it covers the entire surface.
  7. Carefully pour the vanilla pudding over the batter, spreading it evenly.
  8. In a bowl, combine 200g of flour, 100g of sugar, 100g of cold butter, and a teaspoon of cinnamon. Use your fingers to rub the ingredients together until crumbly. Sprinkle this mixture over the pudding layer.
  9. Place the tray in the preheated oven and bake for about 35-40 minutes or until the crumble is golden brown and a toothpick inserted into the cake comes out clean.
  10. Allow the cake to cool in the tray for about 15 minutes before transferring it to a wire rack to cool completely. Cut into squares and serve!
