Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup white chocolate chips
  • ½ cup crushed candy canes
  • Optional: 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water (flax egg)
  • Optional: peppermint extract (use sparingly)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper for easy cleanup.
  2. In a large mixing bowl, beat together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 3-4 minutes.
  3. Mix in 1 large egg until fully incorporated. If using a flax egg, make sure it’s well combined as well.
  4. Stir in 1 teaspoon of vanilla extract for added flavor.
  5. In another bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of baking soda. Gradually add this to the wet mixture until just combined.
  6. Gently fold in 1 cup of white chocolate chips and ½ cup of crushed candy canes, reserving some for topping.
  7. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle the reserved crushed candy canes on top of each cookie dough ball for that extra festive touch.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
  10. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
