  • Lean flank, sirloin, or tri-tip beef
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp olive oil (for marinating beef)
  • 2 minced garlic cloves
  • 1 tsp grated ginger
  • Pinch of pepper
  • Cubed sweet potatoes
  • Sliced bell peppers
  • 12 tbsp olive oil (for roasting vegetables)
  • Salt
  • Pepper
  • 1/2 tsp smoked paprika
  • Crumbled feta cheese
  • Toasted pecans
  • Crispy roasted chickpeas
  • 1 tbsp olive oil (for chickpeas)
  • 1/2 tsp salt (for chickpeas)
  • 1/4 tsp garlic powder (for chickpeas)
  • 1/2 cup extra virgin olive oil (for dressing)
  • 3 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp maple syrup (for dressing)
  • 1 minced garlic clove (for dressing)
  • 1/2 tsp salt (for dressing)
  • 1/4 tsp black pepper (for dressing)

Instructions

  1. Marinate beef (flank, sirloin, or tri-tip) for 30 min-4 hrs in soy sauce, rice vinegar, maple syrup, olive oil, minced garlic, grated ginger, and a pinch of pepper. Pat dry, sear in an oiled skillet for 3-5 min per side (medium-rare). Rest for 5-10 min, then thinly slice against the grain.
  2. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes and sliced bell peppers with olive oil, salt, pepper, and smoked paprika. Roast on a baking sheet for 20-25 min, flipping halfway, until tender and caramelized. Cool completely.
  3. Drain, rinse, and pat chickpeas very dry. Toss with olive oil, salt, and garlic powder. Roast for 15-20 min until golden and crunchy. Cool completely.
  4. In a dry skillet over medium-low heat, toast pecans for 3-5 min until fragrant, stirring. Cool completely.
  5. Whisk together extra virgin olive oil, apple cider vinegar, Dijon mustard, maple syrup, minced garlic, salt, and black pepper in a small jar. Shake well.
  6. In each meal prep container, layer hearty greens, sliced beef, roasted sweet potatoes, bell peppers, and crumbled feta. Store toasted pecans and crispy chickpeas in a separate small compartment. Keep dressing in its own separate container. Combine just before eating.
