These Mini Bagel Breakfast Sandwich Bites are a delightful twist on the classic breakfast sandwich, perfect for sharing or a quick bite. Enjoy fluffy scrambled eggs, savory bacon, and melted cheese all in a charming, bite-sized package.

Ingredients

  • Mini Bagels
  • Eggs
  • Cheese (thinly sliced cheddar, American, or provolone)
  • Breakfast Meat (beef sausage patties or thin slices of beef bacon)
  • Cream Cheese (or butter, mashed avocado, hummus, or spicy aioli)
  • Salt
  • Pepper
  • Milk (optional, for eggs)

Instructions

  1. Prep Your Ingredients: Slice your mini bagels in half. If using beef bacon, cut each slice in half. Whisk your eggs with a splash of milk, salt, and pepper. Preheat your oven to 350°F (175°C) or have a skillet ready.
  2. Cook the Breakfast Meat: Heat a skillet over medium heat. Cook your beef sausage patties or beef bacon until fully cooked and browned. Transfer to a plate lined with paper towels to drain excess grease.
  3. Prepare the Eggs: For muffin tin method, lightly grease a muffin tin, pour in the egg mixture, and bake for 10-15 minutes until set. For skillet method, make a thin omelet and cut out mini egg rounds or scramble and press into patties. Season with salt and pepper.
  4. Toast the Bagels: Lightly toast the mini bagel halves until golden brown and slightly crispy.
  5. Assemble Your Bites: Spread a thin layer of cream cheese or chosen spread on the cut side of the bagel. Place a piece of cheese on top, add an egg patty or portion of scrambled egg, top with cooked meat, and place the top half of the bagel on.
  6. Optional Finish: To melt the cheese, place assembled bites on a baking sheet and bake for 5-7 minutes at 350°F (175°C) or broil for a minute or two.
