This One Pot Garlic Parmesan Chicken Pasta is a creamy, flavorful dish that simplifies your cooking routine. Perfect for busy weeknights or entertaining guests, it combines tender chicken, garlic, and Parmesan in one pot for a delightful meal.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast
  • 8 oz short pasta (penne or fusilli)
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Start by cutting the chicken breast into bite-sized pieces. Season them with salt and pepper.
  2. Sauté the Chicken: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. Sauté the Garlic: In the same pot, add a bit more olive oil if needed, then toss in the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the Broth and Pasta: Pour in the chicken broth and bring to a boil. Once boiling, add the pasta and stir well. Return the chicken to the pot.
  5. Cook the Pasta: Reduce the heat to a simmer, cover, and let it cook according to the pasta package instructions, usually around 10-12 minutes, stirring occasionally. If the liquid is absorbed too quickly, add a little more broth or water.
  6. Finish with Cream and Spinach: Once the pasta is al dente, lower the heat and stir in the heavy cream and spinach. Cook until the spinach wilts, about 2-3 minutes.
  7. Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with more salt and pepper if needed.
  8. Garnish and Serve: Serve your One Pot Garlic Parmesan Chicken Pasta warm, garnished with additional Parmesan and fresh parsley if desired.
