  • 1 cup long-grain white rice
  • 1 tablespoon Cajun seasoning
  • 1/4 cup liquid honey
  • 45 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cups beef broth
  • 1 tablespoon olive oil or vegetable oil
  • Fresh chopped parsley or green onions for garnish

Instructions

  1. Slice your pre-cooked beef sausage into 1/2-inch thick rounds or half-moons. Dice your yellow onion and green bell pepper into roughly 1/2-inch pieces. Mince your garlic. Measure out your rice and rinse it under cold water until the water runs clear.
  2. Heat a large, deep skillet over medium-high heat. Add a tablespoon of olive oil or vegetable oil. Once shimmering, add your sliced beef sausage and cook for 5-7 minutes until browned and slightly crispy. Remove the sausage from the skillet and set it aside.
  3. Reduce the heat to medium. If the skillet looks dry, add another teaspoon of oil. Add the diced onion and bell pepper to the skillet and sauté for about 5-7 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the Cajun seasoning with the softened vegetables and garlic, cooking for about 30 seconds. Add the rinsed and drained rice to the skillet and stir well for 1-2 minutes to coat the rice with the seasoning.
  5. Pour in the beef broth and stir in the honey. Bring the liquid to a rolling boil. Return the browned beef sausage to the skillet, nestling it into the rice mixture. Reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes until the liquid is absorbed and the rice is tender.
  6. Once the cooking time is up, remove the skillet from the heat but keep the lid on for another 5-10 minutes. Fluff the rice with a fork, adjust seasonings if needed, and garnish with fresh chopped parsley or green onions before serving.
