- 1 cup long-grain white rice
- 1 large yellow onion, chopped
- 1 green bell pepper, chopped
- 3–4 cloves fresh garlic, minced
- 1 can diced tomatoes, undrained
- 2 cups beef broth
- 1–2 tablespoons Worcestershire sauce
- 1 tablespoon Creole or Cajun seasoning
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
- 1 tablespoon oil (for browning beef)

- First things first, I get everything ready. I finely chop my onion and bell pepper, mince the garlic, and measure out my spices and liquids. I also take a moment to rinse my long-grain white rice under cold running water in a fine-mesh sieve until the water runs completely clear.
- In a large, heavy-bottomed pot or Dutch oven, I heat a little bit of oil over medium-high heat. Once it’s shimmering, I add the ground beef, breaking it up with a spoon. I let it brown nicely, stirring occasionally, until it's cooked through and no longer pink. This usually takes about 5-7 minutes. Once it’s browned, I carefully drain off any excess fat from the pot.
- With the beef pushed to one side or temporarily removed from the pot, I add my chopped onion and bell pepper to the remaining fat in the pot. I cook them over medium heat, stirring often, until they start to soften and become translucent, which takes about 5-8 minutes. Then, I stir in the minced garlic and cook for just another minute until it’s fragrant.
- Now it's time to bring all those wonderful flavors together. I stir the browned ground beef back into the pot with the softened vegetables. Then, I sprinkle in all my seasonings: the Creole/Cajun seasoning, smoked paprika, dried oregano, dried thyme, black pepper, and a pinch of cayenne. I stir everything well and let it cook for about 1 minute.
- To the pot, I add the can of undrained diced tomatoes, the beef broth, and the Worcestershire sauce. I give it a good stir to scrape up any browned bits from the bottom of the pot. Finally, I stir in the rinsed rice.
- I bring the mixture to a gentle boil over medium-high heat. As soon as it’s boiling, I reduce the heat to the lowest setting, cover the pot tightly with a lid, and let it simmer undisturbed for 20 minutes.
