Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub your potatoes thoroughly. Cut them into bite-sized pieces, ensuring they are all roughly the same size for even cooking.
  3. In a large bowl, combine the cut potatoes with 3 tablespoons of olive oil, minced garlic, salt, pepper, and any herbs you’re using. Toss everything together until the potatoes are well coated.
  4. Sprinkle in about 1 cup of grated Parmesan cheese and toss again. Make sure every piece of potato gets a nice coating of cheese.
  5. Line a baking sheet with parchment paper for easy cleanup. Spread the potatoes out in a single layer, ensuring they aren't crowded.
  6. Place the baking sheet in the preheated oven and roast for about 25-30 minutes. Halfway through, give them a good stir to ensure even browning.
  7. Check your potatoes for doneness; they should be golden brown and crispy on the outside, and tender on the inside.
  8. Once roasted, take them out of the oven and let them sit for a few minutes. You can sprinkle a little extra Parmesan on top before serving.
