Greek Healing Soup is a comforting blend of fresh vegetables, fragrant herbs, and tender beef, simmered to perfection in a savory broth. This delightful dish not only warms you up but also boosts your immune system with its nutritious ingredients.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 pound lean beef, cut into small pieces
  • 6 cups vegetable broth
  • 2 cups fresh spinach (or kale)
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Start by chopping your onions, garlic, carrots, and celery into small pieces. Set them aside.
  2. Sauté the Base: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the onions and cook for about 5 minutes until they become translucent. Toss in the garlic and sauté for another minute until fragrant.
  3. Add Vegetables: Stir in the chopped carrots and celery, cooking for another 5 minutes. This step builds a flavorful base for your soup.
  4. Introduce the Beef: Add your beef to the pot, breaking it up as it cooks. Sear it for about 5-7 minutes until it’s browned on all sides.
  5. Pour in the Broth: Once the beef is browned, pour in 6 cups of vegetable broth. Bring to a gentle boil, then reduce the heat to let it simmer.
  6. Add Greens: After about 20 minutes of simmering, add in the fresh spinach (or kale) and let it cook for another 5 minutes until wilted.
  7. Season: Stir in the fresh dill, parsley, and lemon juice. Taste and adjust seasoning with salt and pepper as needed.
  8. Serve: Ladle the soup into bowls and enjoy it warm. Feel free to garnish with extra herbs or a drizzle of olive oil for added flavor.

Keywords: This soup tastes even better the next day as the flavors meld together. Feel free to add other vegetables you enjoy or have on hand, such as zucchini or bell peppers. If you're a fan of heat, consider adding a pinch of red pepper flakes or a splash of hot sauce for a kick. If you want to keep it vegetarian, simply skip the beef and add more beans or lentils for protein.
