  1. In a large mixing bowl, combine the softened butter and powdered sugar. Using an electric mixer or whisk, beat them together until the mixture becomes light and fluffy, approximately 3-5 minutes.
  2. Add the egg and vanilla extract to the butter mixture. Mix until well combined, ensuring that the egg is fully incorporated and the mixture is smooth.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until a soft dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Once chilled, divide the dough into two equal portions. On a lightly floured surface, roll out each portion into a rectangle about 1/4 inch thick.
  6. Starting from one end, roll the rectangle tightly into a log. Repeat with the second portion of dough. Wrap each log in plastic wrap again and chill for another 30 minutes.
  7. Preheat your oven to 350Β°F (175Β°C). Remove the logs from the fridge and slice them into 1/4 inch thick rounds. Place the rounds on a parchment-lined baking sheet, spacing them apart.
  8. Bake for 10-12 minutes, or until the edges are slightly firm but the centers are still soft. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
