Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 ½ cups of crushed graham crackers with ½ cup of melted butter and 2 tablespoons of sugar. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let it cool.
  2. In a large mixing bowl, beat 24 ounces of softened cream cheese with 1 cup of granulated sugar until smooth and creamy. Add in 1 cup of sour cream, 3 large eggs (one at a time), and 2 teaspoons of vanilla extract. Mix until just combined, being careful not to overmix.
  3. Pour half of the cheesecake filling over the cooled crust. Drizzle with ½ cup of caramel sauce, then add the remaining cheesecake filling on top. Use a knife or a skewer to gently swirl the caramel into the cheesecake for that beautiful marbled effect.
  4. Place the springform pan in a larger baking dish filled with hot water (this creates a water bath). Bake in the preheated oven for about 60-70 minutes, or until the edges are set but the center still has a slight jiggle.
  5. Once done, turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour. This helps prevent cracks. After it cools, cover the cheesecake and refrigerate for at least 4 hours, preferably overnight.
