Instructions

  1. Prepare the crust: Start by preheating your oven to 350°F (175°C). In a bowl, combine 1 ½ cups of graham cracker crumbs with ½ cup of melted butter and ¼ cup of sugar. Mix until the crumbs are well coated. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes and then let it cool while you prepare the filling.
  2. Brew the Earl Grey: In a small saucepan, heat 1 cup of heavy whipping cream until just simmering. Remove from heat and add 2 tablespoons of loose Earl Grey tea (or 2 tea bags). Let it steep for about 15 minutes, then strain the mixture to remove the tea leaves. Let the cream cool to room temperature.
  3. Make the mousse: In a mixing bowl, beat 16 ounces of cream cheese until smooth and creamy. Gradually add ¾ cup of sugar and mix until fully incorporated. Slowly pour in the cooled Earl Grey-infused cream and continue to mix until smooth.
  4. Prepare the gelatin: In a small bowl, sprinkle 2 teaspoons of unflavored gelatin over 2 tablespoons of cold water. Allow it to bloom for about 5 minutes. Then, gently heat the mixture in the microwave for about 10 seconds until dissolved. Make sure it’s not too hot, and stir it into the cream cheese mixture.
