Instructions

  1. Start by preheating your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 ½ cups of crushed graham crackers with ½ cup of melted butter and ¼ cup of sugar.
  3. Mix until well combined, then press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 8-10 minutes until lightly golden. Remove from the oven and let it cool completely.
  5. In a large bowl, beat together 16 oz of mascarpone cheese and 1 cup of sugar until smooth and creamy.
  6. Add in 1 cup of cold brew coffee and 1 teaspoon of vanilla extract, mixing until fully incorporated.
  7. In a separate bowl, whip 1 cup of heavy cream until soft peaks form.
  8. Gently fold the whipped cream into the mascarpone mixture until no streaks remain. Be careful not to deflate the whipped cream.
  9. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
  10. Cover and refrigerate for at least 4 hours, or overnight for the best results.
  11. Once the cheesecake has set, dust the top generously with cocoa powder.
  12. For an extra touch, you can drizzle some chocolate sauce or place coffee beans on top.
  13. Carefully remove the sides of the springform pan and slice into portions.
