  • 6 ounces semi-sweet chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in 2 large eggs, one at a time, followed by 2 teaspoons of vanilla extract. Mix until well combined.
  4. In another bowl, whisk together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  5. Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
  7. While the cookies are cooling, make the pastry cream by whisking together 1 cup of milk, 1/3 cup of sugar, 3 tablespoons of cornstarch, and a pinch of salt in a saucepan. Cook over medium heat, stirring continuously until thickened. Remove from heat and stir in 1 teaspoon of vanilla extract. Let it cool completely.
  8. For the chocolate ganache, heat 1 cup of heavy cream in a small saucepan until just simmering. Pour it over 6 ounces of chopped semi-sweet chocolate in a bowl. Let it sit for a few minutes, then stir until smooth.
  9. Once the cookies are completely cool, spread a generous layer of pastry cream on the underside of half the cookies. Top with the remaining cookies to create sandwiches.
  10. Drizzle the chocolate ganache over the top of each cookie sandwich. Allow it to set for a few minutes before enjoying!
