- 1 lb ground chicken (preferably 85/15 or 90/10 blend)
- 1 cup Panko breadcrumbs
- 1/2 cup milk (dairy or non-dairy)
- 2 large eggs
- 4–6 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup finely minced onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- Salt to taste
- Freshly ground black pepper to taste
- For the Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar
- Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan (9×5 inches) with cooking spray or olive oil.
- In a small bowl, combine Panko breadcrumbs with milk and let them sit for about 5 minutes.
- Heat a teaspoon of olive oil in a small pan over medium heat, add minced onion, and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant. Let cool slightly.
- In a large mixing bowl, combine ground chicken, cooled sautéed onion and garlic, hydrated breadcrumbs and milk mixture, beaten eggs, freshly grated Parmesan cheese, chopped parsley, Worcestershire sauce, Dijon mustard, salt, and pepper.
- Mix gently until just combined, being careful not to overmix.
- Transfer the mixture into the prepared loaf pan and shape the top into a slight dome.
- In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar. Spread half of the glaze over the top of the meatloaf.
- Bake for 40 minutes, then spread the remaining glaze over the top and continue baking for another 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest in the pan for 10-15 minutes before slicing.
- Carefully lift the meatloaf out of the pan and slice into thick pieces to serve.
