Mouthwatering Red Velvet Cream Cheese Thumbprint Cookies Recipe

  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy. Add in 1 large egg, 1 tablespoon of vanilla extract, and a few drops of red food coloring, mixing well until combined.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour, 2 tablespoons of unsweetened cocoa powder, and a pinch of salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  4. Cover the dough with plastic wrap and refrigerate for about 30 minutes.
  5. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Using your thumb or the back of a spoon, gently press down in the center of each dough ball to create an indentation for the cream cheese filling.
  7. In a small bowl, beat together 4 ounces of softened cream cheese, ½ cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  8. Spoon a small amount of the cream cheese mixture into each indentation of the cookies.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
