Instructions

  1. In a mixing bowl, combine the all-purpose flour, softened unsalted butter, sugar, and salt. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.
  2. Add the non-alcoholic beer and vanilla extract to the dry mixture. Stir until just combined, being careful not to overmix.
  3. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  4. Once chilled, remove the dough from the refrigerator and roll it out on a lightly floured surface to about 1/4 inch thickness.
  5. Using a sharp knife or pastry cutter, cut the rolled-out dough into rectangles or squares, aiming for about 2×3 inches.
  6. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper. Place the cut rollchen on the sheet, leaving space between each piece. Bake for 15-20 minutes or until they are golden brown and lightly puffed.
  7. Once baked, remove the rollchen from the oven and let them cool on a cooling rack. Dust them with confectioners’ sugar for a sweet finish before serving.
