Ingredients

Scale
  • 1 medium onion, chopped
  • 23 cloves of garlic, minced
  • 2 tablespoons unsalted butter
  • 1 pound ground beef (or beef stew meat, diced into small pieces)
  • 2 cups drained sauerkraut
  • 4 cups low-sodium beef broth
  • 3 cups egg noodles
  • 2 additional tablespoons unsalted butter
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, for garnish (optional)
  • Paprika, for garnish (optional)

Instructions

  1. Start by chopping one medium onion and mincing 2-3 cloves of garlic. Set these aside.
  2. In a large pot, melt 2 tablespoons of butter over medium heat. Add the ground beef and cook until browned, about 5-7 minutes. Break it up with a spoon as it cooks.
  3. Once the beef is browned, add the chopped onions and minced garlic to the pot. Sauté for another 3-4 minutes until the onions are translucent.
  4. Stir in 2 cups of drained sauerkraut, ensuring it mixes well with the beef and onions.
  5. Pour in 4 cups of beef broth and bring to a boil. Once boiling, add 3 cups of egg noodles. Stir well and reduce heat to a simmer.
  6. Cover the pot and let it simmer for about 10-12 minutes, or until the noodles are cooked through and have absorbed some of the broth. Stir occasionally to prevent sticking.
  7. Once the noodles are tender, stir in an additional 2 tablespoons of butter. Season with salt and pepper to taste. Mix until the butter is melted and everything is well combined.
  8. Serve the dish hot, garnished with freshly chopped parsley or a sprinkle of paprika for a pop of color.
