Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a large bowl, combine 2 cups of almond flour, 1 cup of powdered sugar, and a pinch of salt. Whisk them together to ensure there are no lumps.
  3. In another bowl, beat 1/2 cup of softened unsalted butter until creamy. Add in 1 teaspoon of vanilla extract and continue to beat until it's light and fluffy.
  4. Gradually add the dry mixture to the butter mixture, mixing just until combined. The dough will be soft and slightly sticky.
  5. Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 30 minutes.
  6. Once chilled, scoop tablespoon-sized amounts of dough and roll them into balls. Use your thumb to make a small indentation in the center of each ball.
  7. Place about 1/2 teaspoon of raspberry jam into each indentation. Be careful not to overfill.
  8. Place the cookies on a lined baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack. Once completely cooled, roll them in powdered sugar.
