Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together 1/4 cup of maple syrup, 3 tablespoons of Dijon mustard, 2 tablespoons of olive oil, salt, and pepper. Add a pinch of garlic powder or herbs like thyme or rosemary for extra flavor if desired.
  3. Place the chicken thighs in a large bowl or zip-top bag and pour the marinade over them. Let the chicken marinate for at least 30 minutes, or up to 2 hours.
  4. While the chicken marinates, chop your sweet potatoes and other vegetables into bite-sized pieces. Toss them in a bowl with a drizzle of olive oil, salt, and pepper.
  5. On a large baking sheet lined with parchment paper, arrange the marinated chicken thighs skin-side up, and scatter the sweet potatoes and other vegetables around them in a single layer.
