  • 1 lb Ground Sausage (beef, turkey, or chicken)
  • 1 Red Bell Pepper, diced
  • 1 Yellow Bell Pepper, diced
  • 1 Green Bell Pepper, diced
  • 1 Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 2 cups Cheese (mozzarella or Italian blend)
  • 2 cups Tomato Sauce (marinara or homemade)
  • 1 tsp Italian Seasoning (dried oregano, basil, and thyme)
  • Olive Oil
  • Salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the insides with olive oil, sprinkle with salt, and place cut-side down on a baking sheet. Roast in the oven for about 30-40 minutes until tender.
  3. In a large skillet over medium heat, add a drizzle of olive oil and cook the ground sausage until browned, breaking it apart with a wooden spoon as it cooks.
  4. Once the sausage is cooked, add the diced onion and bell peppers to the skillet. Sauté until the vegetables are tender, about 5-7 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Pour in the tomato sauce and sprinkle with Italian seasoning. Let the mixture simmer for about 5 minutes to meld the flavors.
  6. Once the squash is roasted, remove it from the oven and let it cool slightly. Use a fork to scrape the flesh into spaghetti-like strands and place them in a large mixing bowl.
  7. Add the sausage and pepper mixture to the spaghetti squash, and fold in half of the cheese. Mix until well combined.
  8. Pour the mixture into a greased 9×13 inch casserole dish. Top with the remaining cheese.
  9. Return the casserole to the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.
  10. Remove from the oven and let it cool for about 5-10 minutes before serving.
