- 1 Spaghetti Squash
- 1 lb Ground Sausage (beef, turkey, or chicken)
- 1 Red Bell Pepper, diced
- 1 Yellow Bell Pepper, diced
- 1 Green Bell Pepper, diced
- 1 Yellow Onion, diced
- 3 cloves Garlic, minced
- 2 cups Cheese (mozzarella or Italian blend)
- 2 cups Tomato Sauce (marinara or homemade)
- 1 tsp Italian Seasoning (dried oregano, basil, and thyme)
- Olive Oil
- Salt
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the insides with olive oil, sprinkle with salt, and place cut-side down on a baking sheet. Roast in the oven for about 30-40 minutes until tender.
- In a large skillet over medium heat, add a drizzle of olive oil and cook the ground sausage until browned, breaking it apart with a wooden spoon as it cooks.
- Once the sausage is cooked, add the diced onion and bell peppers to the skillet. Sauté until the vegetables are tender, about 5-7 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in the tomato sauce and sprinkle with Italian seasoning. Let the mixture simmer for about 5 minutes to meld the flavors.
- Once the squash is roasted, remove it from the oven and let it cool slightly. Use a fork to scrape the flesh into spaghetti-like strands and place them in a large mixing bowl.
- Add the sausage and pepper mixture to the spaghetti squash, and fold in half of the cheese. Mix until well combined.
- Pour the mixture into a greased 9×13 inch casserole dish. Top with the remaining cheese.
- Return the casserole to the oven and bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for about 5-10 minutes before serving.
