Instructions

  1. Preheat your oven to 325°F (160°C) and line two large baking sheets with parchment paper or silicone baking mats.
  2. Process the freeze-dried strawberries in a food processor or spice grinder until they are a fine powder. Set aside.
  3. In a large mixing bowl, cream together the softened unsalted butter and powdered sugar on medium speed until light, fluffy, and pale in color, about 3-5 minutes.
  4. Reduce the mixer speed to low and add the pure vanilla extract and finely ground freeze-dried strawberry powder. Mix until just combined.
  5. Gradually add the all-purpose flour and a pinch of salt, mixing on low speed until just combined and a cohesive dough forms.
  6. Gather the dough into a ball and flatten it into a disc shape. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes.
  7. Once chilled, lightly flour a clean work surface and rolling pin. Roll out the dough to about 1/4 inch thickness and cut out cookies using Valentine's Day-themed cookie cutters.
  8. Transfer the cut-out cookies to the prepared baking sheets, leaving about 1 inch between them. Bake for 15-18 minutes until edges are lightly golden.
