  • 200g all-purpose flour
  • 200g chocolate for coating

Instructions

  1. Preheat your oven to 180Β°C (350Β°F). Spread the hazelnuts on a baking sheet and roast them for about 10-12 minutes until they are fragrant. Let them cool, then chop them coarsely.
  2. In a large mixing bowl, cream together 150g of unsalted butter and 100g of powdered sugar until light and fluffy. This should take about 3-5 minutes.
  3. Beat in 1 large egg until well combined. If using a flax egg, mix it in at this stage. Stir in 1 teaspoon of vanilla extract for extra flavor.
  4. In a separate bowl, whisk together 200g of all-purpose flour and a pinch of salt. Gradually add this to the butter mixture, mixing until just combined.
  5. Gently fold the chopped hazelnuts into the dough.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Once chilled, preheat your oven to 180Β°C (350Β°F) again. Scoop out tablespoon-sized portions of the dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving space between each cookie.
  8. Bake the cookies for about 12-15 minutes, or until they are lightly golden at the edges.
  9. While the cookies are cooling, melt 200g of your chosen chocolate in a heatproof bowl over simmering water, stirring until smooth. Dip each cookie halfway into the melted chocolate and then place them back on the parchment paper.
  10. Before the chocolate sets, sprinkle a few finely chopped hazelnuts on top of each cookie for added texture and decoration.
